Most dogs who are very active and want to work with humans are NOT of a particularly calm temperament. A lot depends on the training you do with them.
One of the more "laid back" dogs who are willing to work are Bernese Mountain Dogs but they are quite large, don't live all that long, have a lot of health issues and shed and require lots of grooming.
However, having said that, they are among the calmest of temperaments.

It is not so much the breed as the individual I would go to your local shelter and look at any dog with some retriever in the back ground as they do seem the most trainable. Many pure bred dogs in this country have a host of physical and temperament problems due to the common practice of in breeding (mothers to sons/fathers to daughters) and line breeding (sisters to brothers). Get a shelter dog, save a life, and save yourself money and trouble.
Its dependent on the individual dog but in most cases a high energy dog will be hyper if not exercised enough. My American Pit Bull Terrier could run circles around any dog out there any day but is more then happy to lay on the couch with me all weekend. My Border Collie mix, however, gets worn out more quickly now because she is getting older but will freak out if I try to stay on the couch all weekend. Your best bet would be to visit shelters and meet grown dogs to see how they are. Look for a dog with a gentle, quiet nature but an athletic physique. Talk to the shelter workers and see if they can recommend a dog for you.
None. Very active dogs are active! Lots of exercise will help, but it's not necessarily about breed.
Austrailian Sheperds, Border Collies, labs are all great temperments and very energetic
