If you had to match him up to a colour, which one would it be closest to?
He looks like a Chocolate with Harlequin Spots. This doesn't exist in the real world and Chocolate is not a correct colour in the breed .
I'd say Scooby was a cross of fawn and harliquin dane known as a fawnakin.

Blacks are bred to blacks, fawn to fawn, brindle to brindle and so on. There are some really weird colored dane out ther from accidental breedings.
Mm .. I guess brindle. He clearly has no stripes, but I think that at a glance, an apricot brindle looks more brown than a fawn does. Like, just glance at this:

It can kinda melt into brown at a distance, right? .. Okay, I'm starting to doubt myself. Maybe just fawn, then. Like these:
