You should buy the scuttling gourmet by Alison Campbell. Its got loads of excellent home made ideas for rat treats in. You can buy it here: http://www.shunamiterats.co.uk/scuttling . shtml Shes really knowledgeable on rat nutrition and its helpful on lots of other points too such as types of vitamin or mineral deficiencys and how to treat them:)
They love peanut butter.
You could combine peanut butter with sunflower seeds, pumpkin seeds, corn kernals and roll into one inch balls. Make them ahead of time put them in a ziplock bag and then into the freezer.
Take out one treat every once in a while for a special snack.
I had a pet mouse who liked every kind of nut, especially walnuts and almonds.
Rats will also like veggies. Chopped in small pieces.
1. Get mollasses and a treat that they are not used to having and mix it in a bowl with peanut butter and sunflower seeds.

They love that
Simple treats work well. My ratties were ga-ga for yogurt, especially strawberry yogurt, and cooked noodles of any variety.
Mine absolutely loved sweetcorn and also coconut cream (a rare treat used to give medicine !)..
Try some peanut butter on a piece of apple, they love the double treat.
