Yes. Just like a white rat can have black eyes. The rats with red eyes have a harder time seeing than a rat with black eyes. I personally prefer red eyes because every rat I've owned with black eyes seems to be more afraid since they can see everything while my red eyed rats are more adventurous since they cant see as well.
