That means that when the hamster was small, she wasn't played with much and was probably rejected enough to be insecure with humans making her protective. Try to play with her more and show A TON of attention so she would notice that humans wont hurt her. Hope this helps!
Hamsters are very hyper and curious. It's just their nature to try to run away and explore. Hold her securely in your hands, but don't squeeze her, then you'll be able to pet her.
did u try leaving her alone for a couple of days? its probably excited that shes in a new home thts how my hamster was. also try putting it in a ball and let her run around and get all her energy out.
