I have a new ball python, when do I feed him?

The petshop owner said to wait a week (it's been 3 days) but he seems really hungry, and if he gets anywhere near my mouse cage, he freaks out and tries to get through the bars while flicking his tongue rapidly.

He's a young hatchling (2 months old I think?)

I'm not sure when the shop fed him last.
Wait at least a week from the day you got him to feed him. He need this time to adjust to his new surroundings especially because he is so young. Don't handle the day of feeding or the day after. For babies feed them every 5-7 days and adults every 7-10 days
You should do as the pet shop owner says and feed him a week from now. It is a very good idea to get him away from the mouse cage as well, since this will activate his hunting instincts, stressing him and your mice. A young ball python should be fed once every 7 to 10 days. All snakes have the instinct to eat anything they can catch, even when they may not be hungry, since in the wild they do not know when the next time they will eat. They will gorge themselves if they can, but that doesn't necessarily mean its good for them. Hope this helped .
wait two more days and then try him. hatchlings should also be fed 2-3 times a week

you shouldn't handle a snake 24-48 hours after feeding because they will regurgitate there food.

snakes will eat every time you try him (if your doing it right) if not then make sure the mouse is warm enough and full defrosted if you are using frozen (recommend frozen)
First off don't keep him in a cage with bars. He can injure himself very easily.

Get a aquarium and a good secure top. He smells the mice so of course

he is interested. You can feed him now and it will be fine. If you're feeding

live, make sure he gets the mouse and kills it. Mice and rats will bite and injure

a snake. That's why you should feed defrosted, frozen instead.
feed him 2-3 times a week. Also get a terrarium for him so he cant hurt himself.i recommend a 15 - 20 gallon tank
