answer: Gold ribbon plant, white ribbon plant, kyoto/mondo grass, aqua fern, peacock fern, amazon sword plant, and umbrella plant are some examples of "bog plants" that would do well partially submerged and/or kept in a humid environment.
For cleaning purposes, I would plant the plants in small separate pots. If you need to take down the set up and clean, you can easily do it without having to rip out the plants every time (it will traumatize the plants.) In the little pots, I would place a little aquarium rock or lacerite on the bottom, then some organic potting soil (do not use potting soil with Perlite (the little white balls) or other added chemicals), and then some more gravel on top. The gravel/lacerite will prevent the dirt from going into the water. If you are going to create a "land" portion of the enclosure using something like a large tray with a ramp leading up to it, you can still fill it the same way as the little pots, just don't put any gravel/lacerite on top. The gravel/lacerite on the bottom will create a little drainage for the soil. The tray will also make it easy to clean the enclosure as it can also be removed.
