Almost every seed, nut, fruit, or leaf that you see that people DON'T eat can be eaten by some animal. Birds especially eat seeds and fruits that are toxic to a lot of animals. Small mammals often eat nuts that would be poisonous to us, and can digest leaves, bark, twigs, and other plant matter we just can't break down. Deer eat grass and hay frequently, but people are unable to digest it! Gorillas and apes eat a crazy wide variety of things in the jungle, including most things that people can collect and consume, but also a huge spectrum of vegetation, seeds, and nuts that we don't harvest.
Good list - Grass, exotic berries, plant leaves, bark, twigs, seeds, nuts. It's all very specific depending on the animal you're considering, but there's heaps of things we don't eat that animals do!
I often see birds eating berries from bushes that I know are toxic to humans.
