I am getting a hedgehog Saturday and i still can't figure out whats the best cat food.
Anything Chicken Based

I Would recommed not to use wet food as it can make there poop really runny,

Aww you must be so excited! I would recommend really any high quality chicken based dry cat food. I know this isn't specific but I don't want to give you one specific brand thats not available in your area or pet store. So a range of brands would work the specific brand is up to you and whats most available to you!

As greeny said chicken based products are best but be sure to stay away from ingredients like chicken byproducts and the like. Also try to go low fat cat food as hedgehogs are very sensitive to fat they can even develop fatty liver disease which is deadly. And never use iams cat food its been linked to fatty liver disease as well.
