im not to sure because i own an irish sports horse so i would have totally different tack to you!
If you would like to show, this is what I saw at my last show (I went and looked at my photos, because the stock horses were in the ring behind us ;-)

They were all (men and women) wearing moleskin jeans. A tweed or greeny coloured jacket. Short boots with their pant leg over the boot top. Adults were wearing creamy coloured akubra hats, juniors were wearing helmets. Some juniors were also wearing jodhpurs and/or a pony club jumper and not a jacket.

All horses had the Australian stock horse saddle blanket, as I believe they have to be registered to enter the classes.

Nearly all horses were in a stock saddle (bar one in an all purpose) and they all had a traditional breast plate on. A fair few had a Barcoo bridle on, but I don't "think" it would be a requirement.

Probably would not hurt to check the association web site.
