One really excellent one that I have seen a lot about lately is the use of horses in therapy for children.They have found that many children with everything from autism to Tourette's Syndrome respond to riding horse and their illnesses improve tremendously. Children who have suffered abuse also respond well to riding. It seems that somehow just riding the horses makes the children's bodies and spirits respond in amazing ways.
Of course there are also Polo, horse racing, riding academies, parade horses, rodeos etc.
Jockey (my job! (:) - Race horses
riding instructor-teach people how to ride
riding instructor assistant - help with teaching people how to ride
polo rider - play polo
eventer - showjumping, xcountry and dressage.
farrier - fix shoes and hooves of horses.
dentist - fix teeth and do check ups.
groom - groom horses
stable hand - mucking out and helping around the stables
owner of boarding stables - own a barn or stables where people can keep their horses their.

trainer - train horses
stallion handeler - that comes with bredding. looking after the stallion to make sure he is in top condition ready to breed.
exerciser - exercise the horses, ride them alot.
adoption centre - looking after the abused and lonely horses.
equine vet - well a vet
holiday camp owner - own a holiday camp for people to hack on horses.
stud farm - working with horses and looking after them for breding.
not really involving horses but maybe is shop assistant of a equine shop.

Chiropracter - deals with horses bones
Dentist - deals with horses teeth
Trainer/Instructor - gives people horse riding lessons
Groom - is responsible for the care and appearance of a horse

horse exerciser - ride peoples horses out for them
Horse dealer/seller - buy horses and resell them on at a profit
Professional competitor - ride horses in competition for a living - usually requires a sponser and some really good horses though!

Just to throw that haphazardly in there, I grew up wanting to be mounted police. I know there are a myriad of other jobs out there, but I always wanted to do that! Not going to happen, though.
