Ok im excited about our new mare! She is Chestnut and the sire is Gray ..... So what are the chances of it being a gray? The sires sire is Sorrel and the dam is Gray.

There is a 25% chance it will be gray, a75% chance that it will be either sorrel or chestnut. But even if it is going to be gray , the foal will be born a sorrel color and then will gradually turn more gray each time its sheds if it is going to be gray, until it turns completely white.
You have a 50% of the foal being grey. Since we don't know the sire's base color under the grey, it's difficult to say what other color you may get. Most would say chestnut or sorrel because of Dam, her parents and the sire's Sire. But we don't know the Sire's dam's base color under the grey. Which could be black based. In which case you'd have a small chance of getting a black based foal.
I had a black mare bred to a grey mare and got sorrel. The chances of it being grey are slim to none. Although it is possible. Try a black mare with grey stud or grey mare with black stud. Much higher chances of getting grey.
