i don't need you to give me a complete shopping list but help me with al least a couple items
saddle-i LOVE blue ribbons, buy used if you can. i like harris saddles, tex tan, and circle y is ok. buy show saddles used if you need to save money.
saddle pads-you can get them anywhere, and just about any will do

Well, without knowing what types of events you are training for/showing, its difficult to recommend, but for some reason I am guessing western show classes such as western pleasure and horsemanship .
Saddle: Billy Cook (Sulfur OK) is my favorite. Good value.
Breast Collar: Skip it, they are "out of style" now, and part of showing is the costume
Shank bit: You are going to have to find out what you horse goes best in before anyone can recommend a brand. There is not much commonality in bits, some go through fads, such as Robarts Sr. Pleasure bit, DM Lifter bits, and correction port bits.
Curb chain: any flat linked leather ended curb chain. Again, Billy Cook happens to make them
Draw reins: just don't
Training fork: again, just don't, they are to be used only in experienced hands, and only with snaffle bits, which you haven't mentioned
