I hate rearing. It scares the bejeezus out of me.
To stay on during a rear: Put your hands forward, lean forward, and hold on.
If the horse feels like he is going to flip on you, kick your feet free, let go of the reins, and slide off the butt. Quickly move to one side of the horse and grab his reins when he comes down. This is the safest thing to do. You do not want to get landed on (it could injure/kill you). Try to stay on if you can. Never ever pull back on the reins. This will almost always cause the horse to flip.
To cure a chronic rearer: Bring a few eggs with you. (Not hard boiled, just regular.) When the horse rears, crack one or two eggs on his poll. He will feel the yoke gush down his face and think that he has broken his head open. He will never rear again. I have seen this work first hand on five different terrible rearers. They have never even thought about rearing after the egg trick. (You can also use water balloons.)
Mounted or leading?

If leading, wear a helmet and hold the reins as close to the bit as possible and pull the head down, and shout at her if she tries to get her head.
If the horse is a persistant rearer use a chifney which is a bit designed to dig the horse in the tongue if they try to rear (its a last resort but may be essential for your safety AND NEVER USED TO RIDE WITH.)
Of course, horses are much more powerful than us and if they want to rear, they will probably rear. The safest thing to do is t probably drop the reins and wait for them to calm down.
EDIT Oh and wear gloves! Because its more than likely the reins will be ripped through your palms.And never wrap the reins around your hands - this is how broken bones happen.

One of my horses used to rear and he would rear up and fall over backwards on me!! I was never hurt but he could have hurt me! He did this about 3 times to me: (

I had him checked out by my vet and my chiropractor. We ended up finding out that he was in pain and everytime I rode him I hurt him: '(. He had thrown out his back, hip, etc. He need major chiropractic work .
Amazingly enough after I fixed his problems .... he stopped rearing!! It was like magic!! He was happier horse and I was happier rider:)
When your horse rears you need to act fast because they can go too far and fall on top of you... which wouldn't be too good. Basically when he rears you stand in your stirrups, lean forward, and take ONE rein and pull him to the side. You can't pull back because it 'll just make him go back further and you can't keep your reins loose because, well, that's what we call sitting by and doing nothing. So basically when he rears, turn him to the side. Make sure you give him a good smack on the neck and a NO! for good measure.

When a horse rears, lean forward and pull on one of the reins to pull the horse around so It cant rear. If the horse rears high and is about to fall on you, DO NOT TRY TO STAY ON. When this happens, you want to fall and roll away from the horse to prevent being crushed under the horse.
That is a very serious vice, you'd better fix him soon or get rid of him!!
