I would go with a group of 6 or more, that way you are almost certain to get at least one pair. You can't tell the sexes apart when they are small, although the females get fat when they are ready to breed.



Ratio of sexes doesn't matter, as long as you have at least one pair then can breed.



I prefer Java Moss for breeding as it's really fine leaves make a good place for the eggs and fry to get lost in. But any fine leaf plants will work, even fake ones.



Washed out colour can be a sign of stress in fish. Maybe just not settled into a new tank, but check the water quality as well. Poor water quality (ammonia etc) in a new tank will also stress them. If you can't find anything obvious wrong, just leave them to settle in.
