They should be called Mystery Snails, as they are just one of over 100 species of Apple Snails.
As for the different colors, stores usually only deal with five - Gold, Ivory, Black, Albino and Blue, as these are the ones bred at fish farms. There are a lot more that exist, including Jade, Yellow Stripe, Light Striped Purple , Dark Striped Purple, Magenta, etc, but these are usually only available from private breeders.
I've had purple and magenta snails, you just have to get them from a breeder instead of buying from a big box store. I ordered mine from a member on aquariacentral.com and they were absolutely beautiful:) She does a great job of shipping them to you as well.
